Cortese grapes
The cortese grapes grown on the hillsides in the comune of Gavi produce the wine known as Gavi, which can also utilize the “del comune di Gavi” subzone name.
The grapes come from vineyards at 250-300 meters above sea level, on soils of a prevalent sandy rock formation: potent sandy rocks in alternate layers of sandstone; the colours of these soils vary from light brown to light cream.
The pressing is soft and the must is then fermented for about 10 days at 16° – 17° C. The malolactic fermentation does not take place, this enables to obtain a very light acid vein.
After a brief maturation in bottles, the wine is ready at the beginning of the new year.

Arneis grapes
The vineyards of Arneis for this selection are cultivated in the heart of the Roero area, on the left side of the River Tanaro. The soils have a strong presence of silica, and with the particular mild climate give origins to elegant and fragrant wines.
The grapes are all hand-picked at harvest time, after which follows a soft pressing with a 10-day fermentation at 16-18o C.
A final crucial step is a brief maturation in the bottle to further improve the structure of the wine and the complexity of its bouquet.

The Brunello di Montalcino of the Fanti winery is tasty and elegant. The Brunello di Montalcino DOCG is a warm and charming wine always characterized by the tannins. The Brunello di Montalcino is severe and classic in the best interpretation of the term. First of all there is a careful selection of the grapes in the vineyard during the grape harvest, by manually picking exclusively those berries with a remarkable maturation and a great concentration with a previous sugar and phenolic analysis in every production area. There is a three selection process, followed by the destemming and pressing of the grapes. It ferments at 28°C and the maceration takes place in stainless steel tanks for 25-30 days with the pumping over. The malolactic fermentation occurs before the wood aging. This takes place in two different ways: one in French oak barrels and the other in medium size barrels for at least 24 months. A further aging period takes place in bottles for at least 4 months.
Suggested pairings with the Brunello di Montalcino DOCG
It is perfect to be tasted with grilled red meat, soft cheeses, blue and aged ones. It has to be served in a wide wine glass at 18° C.
